Basque Nature as an anchor point

Parc and herb garden

Right in the middle of the parc you will find the herb garden, a true part of the kitchen, offering a vegetal immersion for the pleasure of our guests.

As Xabi says, “the nature surrounding us is so generous that it sometimes allows to not go further than the family home boundaries. Borage flowers, primrose, wild garlic and edible flowers are a real inspiration which gives rhythms to the seasonality of our menus, allowing an endless creativity”.

 

Producers and local products at the forefront

Based in a region that goes from the impulsive Atlantic to the snowy mountain tops of the Pyrenees, our products are local originating less that 150km away for most of them, to have a subtle cuisine full of flavours based with the best local products.

The chefs’ implication with the producers is real, a true interaction that sometimes result in custom made products.

Innovation, creativity and day to day excellence

The hotel restaurant Les Frères Ibarboure has many distinctions: One star at the Michelin Guide since 1983, Golden Gault & Millau Aquitaine in 2018, Meilleur Ouvrier de France Pâtissieur confiseur for Patrice in 2018 and acquisition of the 4th Toque Gault&Millau in 2021.
 

Transmission and sharing

A family business :
Xabi and Patrice, 3rd generation of restaurateurs, have received their job in heritage. Chefs from father to sons, the two brothers have developed, inside their home in the heart of the Basque Country, a bond maked by their roots.
