Parc and herb garden
Right in the middle of the parc you’ll find the herb garden, real part of the kitchen, that offers a vegetal immersion for the pleasure of our guests.
Xabi keeps saying it, “the nature that surrounds us is so generous that it helps sometimes no to go further than the family barriers. Borage flowers, primrose, wild garlic…edible flowers, are a real inspiration that rhythms the seasonality of our menus, allowing ourselves to an endless creativity”.
Producers and local products enlightened
Based in a region that goes from the impulsive Atlantic to the snowed mountain tops of the Pyrenees, our products are local from less that 150km away for most of them, to have a subtle cuisine full of flavours based on the best local products.
The chefs’ implication with the producers is real, a truly interaction that give birth to custom made products.
The hotel restaurant Les Frères Ibarboure has many distinctions: One star at the Michelin Guide since 1983, Golden Gault & Millau Aquitaine in 2018, Meilleur Ouvrier de France Pâtissieur confiseur for Patrice in 2018 and acquisition of the 4th Toque Gault&Millau in 2021.
Transmission, a family business :
A family business: Xabi and Patrice, 3rd generation of restaurateurs, have received their job in heritage. Chefs from father to sons, the two brothers have developed, inside their home, in the heart of the Basque Country, a bond maked by their roots.
